I don't want to be a part of reviving dead threads (I'm not a necromancer), but I do think it worth investigating an issue brought up in the discussion.
By the time the show aired, it was becoming more common for women to keep maiden names and there was a start of a trend for men to change their last name.
Now, Ron is probably a bit tired of the whole "Stoppable" thing, and what could be better than changing his surname to Possible? After all, anything is possible to a Possible, so wouldn't that help improve his confidence?
Also, would Kim really want to be a Stoppable, a world of accountants, assayers and other people she is so not? Would she want to risk losing what is almost a talisman in her eyes - the Possible name?
Further, this is fashionably eccentric. Not so unheard-of to be weird, not so commonplace as to be run-of-the-mill. In short, much like Kim dresses and much like Ron plays American Football. Would this not suit their personalities so much better than boring tradition?
Besides, it would confuse Drakken, and I think both would enjoy seeing that.

And I was this close to writing a Prince Video/KP crossover. Well, yes they could. I think it ultimately comes down to whether Ron would want to be loyal to his family name (which, after all, is how he gets the "UnStoppable" nickname in American Football) or whether he'd see it as passably romantic (and a way to share the talisman) to go with Possible. He might even opt to change his name in a bid to find something the bad guys can remember. This is tough, as Ron's character makes both options entirely believable for him. KP's embarrassment at anything looking like fandom might make her oppose such a switch, but if that's not Ron's aim, he might not connect cause with effect.

My guess? Kim/Ron stick to their old last names (Come on, they're not puns for nothing), but only as far as normal use. Maybe in the technical papers Kim would make the switch, but I think that it's only as far as the wedding goes or a joke.

Just to throw a monkey wrench into the whole thing here I am going to go with the controversial answer.
Kim will insist on being Kim Stoppable. Despite everything, Kim is a rather traditional girl in many respects. She might be about kicking bad guy booty and women's equality, but look at what she does in the more mundane and normal aspects of her life.
Also, no matter what many people will say children are influenced by their parents. Both Kim's mom and Kim's grandmother took their husband's names when they married. She will look to both of these strong and independent women and see that one can be both traditional and independent.
If you don't agree why don't you go tell Nana that she is a submissive little woman!
