Her father's eyes are green, and even if it was the case that only her grandmother's eyes were green that'd still be a 25% chance of her getting green eyes.
I mean, you do know Father Gregor Mendel's principals and laws on genetics right? The father of modern genetics; did hundreds of experiments on hereditary traits; formed the basis for much of modern forensics and biology; Darwin never heard of him; any of this ringing a bell?

This is basic year one genetics. Didn't/Don't they teach you this in school? wait,HER FATHER'S EYES ARE GREEN...WHEN DID THIS HAPPEN? Every scene he's featured in I believe, or a least they're mentioned as being green. Besides, on the question at hand it's irrelevant.

Of course, I had a Christian school curriculum, and they always pound home the science lessons like there's no tomorrow. Seriously, I was dabbling in collage-level biology last year . . . Which actually makes me question the state of collages in America these days.

Well, Mr Dr. P's eyes are black in the shows, but I think officially they were supposed to be brown (can anyone confirm?). However, that doesn't mean that Kim couldn't have green eyes. My mom has brown eyes, my dad has blue, and I have green. Go here, and tinker with the options a bit. Eventually blue and brown can make green.

The gene for brown eyes, (Which are the closest we can come to the colour of Mr. Dr. P's eyes.) is the dominant gene over blue and green. Green is dominant over blue, but recessive to brown.
Logically, because Mr. Dr. P has brown eyes, and Mrs. Dr. P has blue, it could be assumed that most of their children would have brown eyes.
A number of genes play a role in determining eye colour, however, the simplified version is this:
If there are enough people in Kim's family tree with green or blue eyes, the chances of her inheriting the genes for green eyes (And the Tweebs inheriting the ones for blue.) are higher. We can assume that Mr. Dr. P's parents and Mrs. Dr. P's parents, probably had blue or green eyes, and this is where Kim inherited them from.
However, it is only a cartoon, so the most likely reason is that whoever came up with Kim's character design thought that green eyes looked best on her.
