Much like with Kim Possible, other shows have characters that eventually pair up (whether in the middle or end of the show).
And fans or casual viewers will usually take it or leave it. And then of course there are some people who end up liking the pairing.
As for me, I have to go with Aoyama and Ichigo from Tokyo Mew Mew.
Now I never actually hated the couple, but it didn't really sound compeling as Ichigo was fell for the popular boy (There's a reason why he is determined to be so physical and smart, but that's for another discussion). And no I never really agreed with the Kish/Ichigo pairing either. As bland as Ichigo and Aoyama seem, going out with someone who attacks you pretty often and forceful is as Mr. Spock says "Most illogical".
But seeing the later (undubbed) episodes and the chemistry between them, just made it hard not to dislike it. I mean I am a sucker for mushy romance after all. But I guess for some, you have to see it to enjoy it.
That said, what couples if any did you find appealing upon further viewing?

For me, definitely without any doubt, J.D/Elliot on Scrubs.
In Season 8, for like the fourth time, they became a couple again, and I was so angry and was like, NO NO NO NO. Mostly because the first three, they had failed so unbelievably miserably. But... as season 8 went through it's run, and completed... I was okay with it. They were in their late 20s when they failed the last time around... this time, they were a little bit older, and actually learned from their mistakes.

Sawyer and Juliet on Lost, at the end of series 4 i thought "oh no, how obvious", but by "Lafluer" in series 5 i was fully converted and thinking "Kate who?"

Mia/Peter from Degrassi: The Next Generation. Spinner/Jane from Degrassi: The Next Generation. I've become to adore Mia and Peter's relationship, and same for Spinner and Jane.

Mark/Lexie-Greys anatomy, he is too old for her but, the whole season 5 of them together was so sweet

I think Hurley needs a girl yeah but Libby, he still sees the dead her. I don't know if i'd like it if he hooked up with any one else. some of them like Jin/Sun, Rose/Bernard, Charlotte/Faraday, Des/Penny, Claire/Charlie are just so perfect for each other that they shouldn't only be together or alone and missing each other. Hurley fits in that gang i think.
