Kim's college path is one that I'm currently exploring as well in my latest crossover.
My vote is that she ends up going into education and teaching.
I had considered the International Relations route for her, but figured that she would quickly be disillusioned by the politics involved.
Same for Law. I don't remember exactly what issue it was, but there was a story in the Batman comics about Bruce Wayne's college years. He had been pursuing a law degree, but soon found that Law and Justice were mutually exclusive terms.
Neither do I see her toeing the line and following orders in law enforcement or GJ. Her independant streak would end up getting her labeled as a loose cannon at the very best. Likelihood of advancement virtually nil. GJ, forget about it. To willingly put herself in a position where Will Du was her superior officer?
Medicine, she likely doesn't have the stomach to cut into someone, Mother's Day comes to mind. Well, maybe with a little seasoning she'd be able to handle it though.
I can picture her eventually becoming a teacher to empower the next generation with the knowledge they'll need to change their world.
Though how she'll settle on going into education is a question that currently puzzles me. As of now she's much too active to settle down to such a career.

Space pirates get paid well after all. You know the more I think about it wouldn't Kim be interested in a degree that relates to a field she doesn't already do. Maybe she'd major in lets say Computer Science and learn how to program. She'd get Wade to help her out and make her way up the degree learning various computer languages. Now wouldn't that be a nice path for her to take.

I have Kim and Ron both majoring in Sociology, with a career goal of eventually doing the UN Aid/Red Cross kinda thing, you know, the other part of being a hero that we seldom see Kim doing on the show, but all her rides constantly talk about— being rescued from blizzards, floods, mudslides, crumbling dams, etc.
But all she had to do was nab one seriously wanted terrorist and bam! Millionaire!
I think she's continuing to study sociology though.

In my TUY series, I have Kim majoring in psychology with a minor in politics. Poltics is pretty general, ranging from local to international relations & affairs. IMO, I can't see Kim going into a career that has nothing to do with her skills, knowledge, and leadership abilities in high school. From her personality and various exculur activities, I guess she's a people person, thus why she goes on missions and doesn't ask for any payment in return. So it makes sense (to me) that she would wanted to expand her skills to better help other people in the world, especially if she continues her missions, etc. Heck, when she graduates from university, she could easily join GJ, if she wants, given she would have skills that they would stupid to pass over in a growing, dangerous world. So, I can see her taking courses in international relations & affairs. The diplomatic skills will help her greatly how to deal with the various governments and people in the world better.

I see her in the medical field specifically because of her coma and the work she has to put in to make as full a recovery as possible. She may feel the need to help other people in similar positions, especially in the recovery aspect of getting their live's restored as much as possible.

Aside from Kim's natural independance, there are several elements of law enforcement that I just couldn't see Kim being able to handle.

I went with education. Maybe with a minor in something academic. Math, sciences, etc.
Being a college prof would give her flexable hours, so she could continue freak fighting.

Okay, I voted other.
Medicine- Physical Therapy maybe (for your story only), but Mother’s Day pointed to her not liking medicine a lot. Then there is the fact that she would have to go through residency and study like crazy to make grades good enough to get into Med school. These all are not conducive to missions.
Law Enforcement- I have to agree with the others who say that her style is too freelance to be saddled comfortably with the rules and regulations of a formal organization. However, this is about a major and not a job. She could major in law enforcement and then become tantamount to a PI.
International Relations and Diplomacy- Why would she do it? I see nothing in canon or your story to point towards her being interested in politics. In fact given her personality I could see Kim being disgusted by politics. Think of her run in with Barkin. She needs to save the world or at least herself, and the politics of the situation ran counter to it. In dealing with politics she would always have to compromise her principles for something. Kim is about saving people on a personal level. International diplomacy is a nice way of saying someone or everyone is getting screwed. I think Kim would lose her taste for it very quickly.
Sciences- This is a possibility. I could see her doing something geared towards forensic sciences.
Political Science- This is a very wide open major but it falls into the same realm as Diplomacy.
Education- Um… No way in Hades. First, if she were a K-12 teacher you can forget the hero gig. Those hours are not flexible at all. Second, people keep talking about her being a professor. Well, professors do not major in education (unless they are going to become education professors). Professors major in their field and then achieve a Ph.D. in that field (or a Masters for Junior College). So if you are thinking collegiate professor she needs to pick a field still and plan on at least eight years of school (six for Masters).
Other- If you are planning on having Ron open a restaurant then what about her planning for their future and majoring in business management or finance. Someone has to handle the finances and Ron has not demonstrated an aptitude for this in the past. It would also be new, I don’t recall anyone doing this before, and it makes sense if they are getting as serious as they seem.
The other thing to consider is that people change their majors. Perhaps she starts in IR&D and then becomes disillusioned with it and changes to business after her and Ron step into the next stage.

Medecine! I think she want´s to follow her mom´s fotsteps! Maybe not a brain surgeon but maybe a surgeon of something else! I think this fight for justice, nail criminals and be a lawyer! i don´t think International Relations and Diplomacy is something for KP! Something esier like having her own Pet store

I cannot see her at all in the Education realm!!! She is all heroics, but I don't know if she has the attitude to deal with it all. Yes, she can go for temporary world disasters, but a constant teaching gig? She would have a nervous break-down.

Reason I'm asking this is if our girl who is used to saving the world could ask someone else to go off and die in her place. Something to consider when she's looking for her new career. After all Kim is an honest girl and if she thinks she's unable to handle something she won't. Her nature Kimness I think would stay out of that one too since it is a very serious issue. Just something to consider.

Yes, if she had no other choice. Would she willingly choose to do such? No. For a perfect example of why Kim would not be a good match for any organization or politics read MrDrP's KP/Star Trek:TNG crossover. Talk about politics and organizations grating on her. (Don't take this as me saying this is a bad story it is awesome, but is also a good example of why I feel the canon KP would never join GJ or a police force.

Now that I've had some time to ruminate on the possibilities, (pardon the pun) it seems there is a career out there that would be suitable for Kim.
Journalism.
She'd be able to maintain her independence. Sure she'll have an editor, but I suppose its better than having a superior officer.
We've seen other heroes use that career to their benefit in a variety of media. (Superman to name one)
If you consider it a part of her world or not, there was the example of Mim Possible from the early 20th. She used her career to help out.
Plus her writing could also inspire hope

Parareru, journalism is an excellent choice for Kim. Of course, I was thinking of her more as Lois Lane then Superman.
